Chilly out; Warm inside: Recipe for curry cauliflower soup: In a large soup pot 1) Soften in a bit of water (and 1TBS butter if you like): 1 chopped onion, 2 cloves of garlic 2) Chop up a whole head of cauliflower (about 1.5 - 2 lbs) and add to pot with 4.5 cups of veggie stock (or just water). 3) Bring to a boil and then lower to simmer for ~20mins 4) Add ~2TBS of your favorite curry (mine is spicy!), 2 TSP of ginger and 1TSP of coriander (optional) or nutmeg 5) 1/2 cup of yogurt (or cream) & black pepper (salt optional) 5) Puree (I use an immersion blender in the pot) 6) ENJOY!
